That's some awesome plating. I love the splattered stuff (violet sauce, I'm guessing). How does the milk foam get plated? Whipper? Is he just careful about not leaving tails on them?
I agree on the awesome plating. He is a very talented young chef. Im not sure how he made the milk foam. I doubt he used an iSi. I would imagine a hand mixer and a spoon to plate. I can ask him how he made it if you would like. How is the restuarant concept coming along David?
