New Dessert


"Tea Party"
Chamomile mousse, matcha cake, hibiscus gel, black tea gelee, matcha crumble,
jasmine foam, matcha "vines", honey sphere, earl grey ice cream

  2. I piped white chocolate onto green tea powder and then sifted more green tea powder onto the piped chocolate, allowed the tempered white chocolate to set and then removed them from the powder

  4. thank you very much, the spheres are made only using tea, sugar and gelatin. (set in silicone full sphere molds). The mousse is also only set with gelatin.

  5. how come the mousse did not break when coiled? how many percent of gelatin did u use?

  6. I used 2.5 sheets for about 350 g of liquid in the mousse
