New Dessert






Cherry glazed cherry, cherry cheeks, maraschino gelee spheres,

pistachio pain de genes, rose hip ice chips, freeze dried raspberry,

raspberry tuile, lime zest

  2. I made a raspberry gel noodle using a combination of low acyl and high acyl gellans, I injected a vinyl tube with the gel mixture and let it set. I extruded it using an isi charged with air. After the noodle was out, I shaped it and propped it up and dehydrated it until crisp.
